Potatoe’s cakes – polish plendze

This dish couldn’t be easier! This is taste of my childhood. The beauty of this cakes is that you can eat them as a dinner or as a dessert. And srsly it is so simple!

There is also nice thing about name – in Poland this is very popular dish and it’s called placki ziemniaczane – potatoe’s cakes, but in Poznań (large city on the west) it’s called plendze.


 

What you will need:

  • 1 kg of pototes (white ones, can be normal or baby ones)
  • 1,5 table spoon of flour (plain flour)
  • pinch of salt and pepper
  • any fat to fry (oil, margarin, butter, etc.)

*additonaly onion/garlic/herbs/fried onion/etc.


 

How you make it:

  1. Peel potatoes and puree them (just put them in the blender and mix until smooth).
  2. Add seasoning and mix again.
  3. Add flour and stir with spoon. Dough should be still runny.
  4. Heat oil on a pan and with spoon put a small cakes on it.
  5. Fry both sides until golden brown. As they drink a lot of fat you might want to put them on paper towel to get rid of additional fat.

Ps. You can add a little bit of onions or garlic or herbs – it really depends on what you like. You can serve it with sourc cream, yogurt, mayo, garlic sauce, tomatoe sauce, etc. It is really flexiable dish.

Thus, you can also eat them plain or with sugar or jam if you want to have nice dessert.

Indian flat-bread – roti

This bread is pretty simple to make. And mainly all ingredients are already in your kitchen. The only thing that might be a little more time consuming is proper preparation of dough. But when you will make it once you will remember it for a long time 🙂

In India this is bread that you usually eat for breakfast because it is quick to make and very fulfilling. Indian eat it with rice and curry or dal. I prefer to eat it with hummus or cheese or maybe some chicken. I treat it more like a tortilla 🙂

This is basic recipe. You can add herbs and make herbal roti.

 

You will need:

– cup of wholegrain flour (white flour will do as well)

– 1/4 cup of warm water

– pinch of salt

– olive oil or any oil that you have

 

How you make it:

  1. Mix all ingredients until dough is not sticky. Leave it for about 10 – 15 minutes to rest.
  2. Divide dough into more or less 8 small balls.
  3. Roll out ball into 2 – 3 mm circles. Put a small tea spoon of oil on the roti covering it all. Then fold it into half. Put more oil on dry side and again fold. Next roll it into small ‘rose’. Do the same thing with all dough balls.
  4. Heat up dry pan. Take one ‘rose’ and roll out. Put on hot pan. Try to move it a little bit – it should not get burn.
  5. Turn sides. On fried side put a little bit of oil and turn again. Repeat to all ‘roses’.

Ps. It might sound very complicated but when you will do it once, trust me you will never have to use recipe again 🙂

Hummus with garlic twist

Hummus is simple and quick to prepare. I guess every country has slightly different recipe. This is my favorite one.

The thing is hummus is that you can eat it almost with everything. I really enjoy it with fresh carrots or one of the flat breads.

 

What you will need:

– can of chickpeas

– few table spoons of oil olive (it really depends on the chickpeas that you have – some are more moist)

– two cloves of garlic (for more intense taste you can add more)

pinch of salt and pepper

– teaspoon of lemon juice (it is optional)


 

How to:

  1. Put garlic cloves on hot dry pan and fry them a little bit. Peel them.
  2. Put all ingredients in a blender and mix well. If mixture is to thick add additional olive oil.
  3. Place in a bowl. Sprinkle with olive oil and chili powder.

Homemade bread

Long time no seeing but I am back with new recipes for easy and tasty and low cost food from all over the world! 🙂

Today I will prove you that making your own bread is easy! Many times people say that they do not have time or it is to complicated or even they don’t have this special machine.

Well, making bread is easy and quick. And to tell you the truth I am making it whenever I have lazy day.

So let’s go!

 

What do you need:

  • 300 ml of warm water (if your tap water is clean you can use it)
  • tea spoon of salt
  • tea spoon of sugar
  • table spoon of oil (olive oil would be the best)
  • sachet of dry yeasts
  • about 0,5 kg of flour (I am using white one, but to make it healthier you can use wholegrain)

* you can add some herbs as well

 

How to make bread:

  1. Mix everything together. Dough should be elastic but shouldn’t stick to hands. To do that add flour slowly – if you will add to much bread will be pretty hard.
  2. Put cloth on top and place it in warm place for 2 hrs. If you are in hurry you can omit this step.
  3. Preheat oven to 220C. Before putting bread in the oven put some water inside oven – it will keep bread moisture.
  4. Bake bread for 45 minutes.

Quick Asparagus with a dip

Ok this is starter or a snack that couldn’t be easier! It is great as a starter when the main dish is time-consuming and you really want to make something quick but very tasty. It is also awesome for a healthy snack. I think that even kids will try to like it! 🙂

What will you need:

  • asparagus

For the dip:

  • mayo
  • french mustard
  • milk

How to make it:

1. Heat grill pan (if you don’t have grill pan you can use normal pan instead but make sure not to put oil on it – instead you can put a little bit of salt and wait until salt will start to pop – it will mean that the pan is ready and you don’t need to put any oil and nothing will stick). It should be like medium hot otherwise it will burn very quickly.

2. Put asparagus and let it fry. It should get caramelised on both sides.

3. In the meantime you can prepare dip: all you have to do is to stir few spoons of mayo with few spoons of mustard and milk. It really depends on you – if you like more spicy put more mustard.

Ta dah! That’s it! I have told you it is easy and quick! Nevertheless, taste is still sophisticated and will fit into big parties or evenings with your family.

Winter treat – mincepie

Winter has come.. There are special treats that will make us warm on those chilli days and frosty evenings.

I am speaking about mincepies. Stuffing is avaiable in stores but you can also do it by yourself mixing your favourites (raisins, nuts, apples, etc. with honey or even a little bit of moulded wine if you prefer). More important is easy dough that will be fast and delicious.

What you will need:
▶ 350g of flour
▶ 225g of soft butter
▶ 110g of sugar
▶ 1 egg

How to make it:
1. Flour and butter mix well until doigh will be like breadcrumbs.
2. Add egg and sugar and mix.
3. Put it in a foil or a plastic bag and put it into the fridge for at least 10 minutes.
4. In the meantime heat oven to 220°C and grease muffins tray.
5. Take small part of chilled dough and stick it to muffin tray. Dough should cover well all sides.
6. Put one table spoon of stuffing into each pie.
7. From remaining dough make small lids to cover or pies.
8. Bake for about 15 – 20 minites.

Persian pudding – shole zard

Persian cuisine is amazing. If you have ever heard Persian music I can tell you that Persian food is like notes closed in meals. Taste is deep and misty.

I am leaving in part of the world that Persian or Iranian cuisine is something very exotic and unique. Most of people think that is hard to get ingredients and it so hard to make. In fact, they are pretty wrong. Needed things you can mostly get in local grocery store or in bigger supermarket. Meals aren’t complicated but they are very tasty. One Iranian used to say that Persian cuisine is very tasty but main thing is that you spend a lot of time to prepare it and then quickly eat it as it is so delicious. And he was right – for working people is mostly things you can do during weekend but believe me – it is worth to spend every single minute preparing those dishes.

This time I will show you how to make shole zard – Persian pudding. It is really unique taste not popular in Europe. It is very sweet but so delicious. The colour is beautiful. But what I love most about it is smell – when you are cooking it the whole home smells so lovely!

 

What you will need:

  • 1 cup of rice (I used pudding rice which is a little bit shorter then normal rice, but you can use any kind of white rice)
  • 7 cups of water
  • a little bit of salt
  • 2 cups of sugar
  • 2 table spoons of butter (or oil, or ghee) – if you do not have it, it is ok, because fat is option
  • 1/2 of spoon of saffron
  • 1/2 cup of rose water
  • 1 tea spoon of cardamom

 

  1. Ground saffron and put into 1 table spoon of warm water. Wash rice few times until water will be perfectly clean.
  2. Boil rice in 7 cups of salted water. When it will be boiling put a lid on a pot, make small gas and boil for another 30 minutes. Rice should be very soft.
  3. Next put sugar, butter (if you are using one), saffron, rose water and cardamom into the rice. You might use also chopped almonds (1/2 of cup). Now you can enjoy lovely smell that will fill your home!
  4. Cook it for about 55 minutes. For whole time keep and eye on it – rice should not burn. Pudding should be thick and smooth. If needed you can add additional water.
  5. Pudding is awesome when hot and cold.

Pakora

Indian cuisine is so massive!  Every family have million recipes for every single dish. Mainly you have to be patient to cook it. But not always…
I am sharing with you recipe for pakora. It is a lovely and easy snack. This is basic recipe but you can add any veggie you like to have variety of snacks.
You can eat it with dip like mint one or without. Both tastes very good!

What you will need:

  • cup of gram flour (chickpeas flour)
  • 3cm of ginger (to make it even more easy you can use few spoons of ready made ginger paste), chopped
  • onion, chopped
  • green chilli (if you want a little bit less spicy remove seeds), chopped
  • 2 table spoons of chopped coriander
  • 2 tea spoons of baking soda
  • 1/2 cup of water
  • salt
  • oil

1. Mix everything well. Dough should be like syrup.
2. Leave it for ar least 15 minutes to rest. In that time soda will work and your pakora will be fluffy.
3. In the mean time heat oil. You will need big pot for deep frying.
4. With spoon put some dough in well heated oil. Fry until golden brown.

Arabic cookies

This is my first post ever! I am so excited 🙂

So for the first recipe I have chosen easy and quick Arabic cookies. I really like taste of cardamom: fresh, a little bit ground one with strong smell. You can use powder or seed. I am using seeds – they have stronger aroma.

Also, I am using ghee but you can also take oil or butter – depends what you are used to or what you have in the kitchen 😉

If you don’t have one or simply you do not like it you can exchange it with cinnamon.

So let’s start!


What you will need:

  • 1 cup of flour
  • 1 tea spoon of green cardamom (or few seeds)/cinnamon
  • 1/2 cup of oil/butter/ghee
  • 1/2 cup of icing sugar
  • 1/4 tea spoon of baking powder
  • (additionally you can have almonds or nuts to put on top of cookie – before you do that put them for 3 minutes in boiling a little bit salty water)

How to do it:

  1. Heat oil/butter/ghee and add sugar. Heat will help sugar to melt and mix with grease. Do not boil. Mix it well until smooth.
  2. Add cardamom/cinnamon and then slowly flour with baking powder. Mix well – dough shouldn’t stick to your hands.
  3. Make small balls and put them on baking tray (don’t forget about baking paper!). Cookies should have space because they will grow a little bit when baking. Then press them a little bit on the top. If you are using almonds/nuts now its time to place them in the middle. If you are using stamp use it now.
  4. Bake in 180 degrees for about 10 minutes (it really depends on your oven – mainly keep an eye on cookies and when they will get lightly gold it means they are ready).
  5. Now the most important part – let them rest and cool down for about 30 minutes.
